Contestant Information and Instructions
SELLING BARBEQUE
Meat for selling may be brought to the contest pre-cooked (see below). Contest meat must start raw and will be inspected on Friday.
MEAT INSPECTION AND HEALTH DEPARTMENT REGULATIONS
All meats cooked at the contest must be USDA-approved meat or have been purchased from a USDA-inspected source. Cookers must be able to show proof of this.

Meat inspections will be scheduled at check in; the contest representative will certify that the meat begins raw. Meat for selling does not need to begin raw, you may bring pre-cooked or pre-marinated meats. However, pre-cooked foods MUST have been prepared in a compliant commissary or inspected commercial kitchen. Cookers must be able to show proof of this. Sign up at the Registration booth for meat inspection when your booth is completely set up.
CONFIRMATION
A confirmation packet will be sent to each participant after initial registration paperwork and check have been received.
REGISTRATION AT VENUE
Each team must first register at the Registration Booth located on site upon arrival on Friday, August 27, 2010. We will have staff on hand to assist you with finding your spot if needed. All head cooks must attend a cook’s meeting Friday evening at 5:00PM at the venue. The location will be confirmed at time of check-in. Some vendors will have the option to move in on Thursday evening, August 26, 2010.
JUDGING & AWARDS
Judging of the BBQ Cook-off on Saturday, August 28, 2010, will be conducted by the Kansas City Barbeque Society. Judging rules will be explained further at the cook’s meeting Friday evening.

CLEAN-UP & EXITING
All teams are required to clean up their assigned cooking areas and return the site to pre-competition conditions. The area must be cleaned before Noon on Sunday, August 29, 2010, and the head cook will be the responsible party for fulfilling this requirement.
HOW TO APPLY
Simply complete the attached application and submit it on or before August 1, 2010. Entries must be postmarked by that date to be considered as the competition is limited to a total of 25 teams. You do not have to be a member of the Kansas City Barbecue Society or Rocky Mountain BBQ Association to participate in this event. Colorado State BBQ Championship at Craig reserves the right to reject any application. If your application is not accepted, your money will be refunded. However, no refunds will be made after you have been accepted into the contest. All photos taken of your team become the property of Colorado State BBQ Championship at Craig and may be used for promotional purposes without your prior consent.
Contestants agree to indemnify and hold Colorado State BBQ Championship at Craig and The Memorial Hospital at Craig, its employees, agents, sponsors, and volunteers harmless from any and all claims made against Colorado State BBQ Championship at Craig and The Memorial Hospital at Craig, its employees, agents, sponsors, and volunteers, including, without limitation, all costs, liabilities, judgments, expenses, damages, or reasonable attorney’s fees arising out of or in connection with (1) any structure erected by the contestants, (2) any apparatus, equipment, or personal property used by contestants (3) any act of omission on the part of the contestants, its agents, invitees, participants, representatives, employees, and servants, and (4) any claims made on account of or resulting from contestants’ participation in the contest.
